I've talked about my love for autumn here. And with the weather cooling down, I'm starting to get into the fall spirit. I absolutely can not wait for all things pumpkin flavored and boots. You've gotta love boot weather! Here are some fall decorating and cooking ideas that are leaving me longing for the season to really kick in.

You know that frantic feeling that you experience when you are about to head out the door to go to a party and realize that you were supposed to bring some kind of food? I had a similar experience just last week but luckily these cake mix cookies came to mind, saving me time and the embarrassment of showing up with a clear plastic box from Ralph's full of overly sweet, white crumbly cookies coated with a half an inch of colored icing and sprinkles. You know the ones I'm talking about. These have all the delicious flavors of your favorite cake but in the simple form of a cookie.
These are so simple! Just add 1/3 cup of vegetable oil and two eggs to a box of cake mix (I used yellow), place small balls of dough on a baking sheet, and pop em in the oven for 12 minutes and walla! Top with a little chocolate fudge icing and you have the perfect combo of sweet and salty. For easy cleanup, I like to lay down a sheet of wax paper instead of placing cookies directly on pan. Just when you thought it couldn't get any easier!
I have tried this same recipe using red velvet, carrot, and lemon caked mixes. They have all been absolutely scrumptious.

Rosemary, Chives, and Mint
I used the mint in my favorite fruity salad-spinach cantaloupe with mint.
And the eggs in my fridge are calling to be made into an omelet garnished with those chives.
There is something about herbs that makes food just that much more special!

Today was the first day of classes at UCLA. I have always loved the first day of school. New school supplies, new clothes, new classmates. Its the best! I snagged the roomies this morning to take a quick back to school picture to keep the tradition going. Here are some first day of school pictures from the archives.

Ever have a recipe or food that you so strongly associate with a certain season or time of the year? I have been making this recipe for a frozen treat virtually all summer and will continue to make them into the fall. All it takes is some vanilla wafer cookies, a tub of cool whip, your favorite flavor of yogurt, and some coco topping for the top (optional). These are such a great, low calorie dessert and they are so satisfying! I'm so anxious to try it with new flavors of yogurt. So far the mocha flavor has been my favorite!
Also, I must note that a little ingenuity that went into this. We didn't have any cupcake liners so we cut wax paper circles and molded them to the tin. It worked great!

On my next trip to Olvera Street, I will definitely be picking up a few (overpriced) souvenirs. I had my eye on some leather sandals and a woven Navajo blanket. And while they were oh so tempting, I just could not get over the fact that I saw the same stuff, when I was in Mexico last summer, for virtually a third of the price.

In recent conversation, it has been brought to my attention that the general public may not be as familiar with the term "hipster" as my peers in LA. And so, I shall define it via Urban Dictionary: "Hipsters are a subculture of men and women typically in their 20's and 30's that value independent thinking, counter-culture, progressive politics, an appreciation of art and indie-rock, creativity, intelligence, and witty banter... Although "hipsterism" is really a state of mind,it is also often intertwined with distinct fashion sensibilities."

This evening, my roommates and I hosted a CRU sorting party to sift through all the surveys we have been doing for new students who may be interested in joining our club. To top off this perfect day, I got to hold a 2 month old baby at the end of the event!

San Juan Capistrano
Hey all! Lots has been going on these last few days! For starters, I moved into my very first apartment. School starts in a few days and campus is just bustling with activity. I love it! I also just returned from a weekend retreat with Bridges International at a beach house in San Juan Capistrano. I am so incredibly excited about what the Lord is going to do this year in the Christian fellowships on campus. I've been reading a book called Oikos by Tom Mercer and it has gotten me so excited about relational evangelism. That is all. Basically I'm just very happy = ]

My mom showed me this precious picture she found on Pinterest the other day. Isn't it beautiful? I mean just absolutely "make my heat melt-warm fuzies" kind of beautiful. I think I could possibly stare at it for hours. I'm thinking of incorporating it into a craft project or wall art. Not exactly sure but one thing's for sure- I love this photo!
In other news... I've recently completed a few long overdue craft projects. Can't wait to share them in the coming days.
